Process: This washed coffee goes through an innovative process developed by Diego on his farm. The coffee cherries go through 2 phases of fermentation the first one 36 anaerobic followed by a shorter 2nd phases fermentation. After fermentation the coffee undergo a thermal shock process using cold and hot water a proprietary process, then the coffees go through a rapid dehumidifying to lock in all the attributes
