Process: In Cherry the coffee is Pre fermented in sealed containers for 24 hours. Then the cherries are pulped leaving the mucilage intact known as "honey process". In Mucilage the beans are then co-fermented anaerobically with yeast and strawberry flavours for 5 days. The beans are then dried by mechanically dried for 10 days then placed in sealed bags for a 5 day stabilization period
