Ethiopia so famously known for its wonderful coffee and coffee traditions one of the last places in the world where you would be offered a cup of coffee even before the first hello. This coffee comes from a sub region “Guji” that has become well known for producing exceptional and distinctive coffees. The coffee beans are handpicked and sorted and within 8 hours brought to the washing station that is now partly owned by the farmers. Here the cherries are pulped before undergoing a dry fermentation for 24-72 hrs. The coffee is then washed in open concrete pools then intensively dried for 48 hours in single layers then stacked and dried on raised beds for an additional 14-18 days. During this process the coffee beans are continuously moved and rotated to ensure even drying to an 11.5% moisture content. Throughout this process the beans are constantly being monitored then hand sorted to ensure that only the highest grade makes it through. The coffee will then rest in parchment before milling and preparation for export.
