Everything about this coffee is geared towards a rich, dark, toasted flavour.
We roast the beans until second crack so the naturally occurring soluble oils are just below the surface. Over time, these oils (called caffeol) rise to the surface which creates both a shinier and darker-looking bean.
We only use high-altitude grown beans for this blend. These are better able to handle the higher temperatures in the roasting process while still maintaining their balance and structure. This allows for a darker profile without carbonization and smokiness.
The result is a bold, rich, well-balanced coffee with subtle notes of dark chocolate and caramel.
