Process: It is this single varietal, "Caturra" that Huver has specifically chosen to go through the exceptionally crafted proprietary process. Once picked the cherries go through a semi-washed process with 60 hours of aerobic fermentation in concrete tanks. The coffee cherries are then depulped and transferred to steel tanks where they undergo anaerobic fermentation for multiple days. Lactic acid made from cooked sugarcane and passionfruit are then added to the tanks. When ready this coffee is then sun dried for 20 days and then stored for another 20 days before being shipped. Note most of the coffee is prepared on order so once the beans are sold out they are gone for the season. The coffee can then be pre ordered for the following production year.
Notes: Chocolate, red fruits, citrus, apple
