Process: In Cherry the coffee is fermented in sealed containers for 48 hours. Then the cherries are pulped leaving the mucilage known as honey process. In Mucilage the beans are then co-fermented with yeast and banana flavours for 5 days. The beans are then sun dried on patios followed by mechanical drying in silos followed by a 30 day stabilization period
